Hogfish is our favorite locally caught fish in the Florida Keys. You can catch it on a line or with a spear gun. Hogfish is amazingly delicious and so easy to prepare. The less you do to it, the better. It is that good.
- Fresh Hogfish (or fish of your choice)
Rinse the fresh hogfish filets. Pat dry with paper towel.
Put butter and minced or pressed garlic in saute pan on low heat. Salt and pepper the melting butter. Squeeze fresh lemon juice into butter, place slices of lemon in the melted butter. Increase heat to medium or medium high. Place parsley on lemon slices in pan. Place hogfish on the lemons slices and parsley in the butter. Salt and pepper fish. Let cook for about 3 minutes. Turn fish, salt and pepper again and cook until flaky and done.
Serve with sides of your choice!! Yum, yum!!!
